Christmas Lemon sugar cookies
3 cups flour
1 1/4 cup sugar
1 1/4 tsp baking powder
1/4 tsp salt
2 large eggs
1 tsp. Vanilla
1 tsp. Lemon zest
3/4 cup Constance Estate Lemon Infused Coconut Oil
-Preheat oven to 350F.
-In a mixing bowl sift together flour, salt and baking powder and set aside. In another bowl cream together sugar, eggs, vanilla and then add oil. Add flour mixture to wet ingredients gradually until a stiff dough is formed.
-Refrigerate dough for 1 hour to make dough easier to roll out.
-Roll out dough to a ¼ inch thickness on a lightly floured surface with a lightly floured rolling pin and use cookie cutters to cut out desired shapes and place on a parchment lined cookie sheet.
-Bake until edges are lightly browned 10-12mins.
-Remove cookies from oven and place on a wire rack to cool.
-Decorate cooled cookies with royal icing if desired.
