Healthy Loaded Banana Muffins⁠

Ingredients⁠
1 cup all- purpose flour⁠
½ cup whole wheat flour⁠
1 tsp baking powder⁠
1 tsp baking soda⁠
1 tsp salt⁠
½ tsp ground cinnamon⁠
½ tsp ground nutmeg⁠
¾ cup coconut sugar⁠
1 egg⁠
1/3 cup Constance Estate Lemon Infused Coconut Oil⁠
1 tsp vanilla extract⁠
3 med bananas⁠
¼ cup pumpkin seeds + extra for topping muffin⁠
¼ cup oats + extra for topping muffin⁠
½ cup chopped pecans⁠

Instructions⁠
• Pre-heat oven to 375 degrees F. Line a 12 cup muffin pan.⁠
• In a large bowl sift together flours, baking powder, baking soda, salt, cinnamon and nutmeg and mix well to combine.⁠
• In another bowl mix mashed bananas, egg, sugar, oil and vanilla extract until smooth.⁠
• Add wet ingredients into dry ingredients and fold in to combine. Add pecans, pumpkin seeds, oats and fold in gently.⁠
• Fill muffin tin almost to the top and top will extra pumpkin seeds and oats. Bake muffins in pre-heated oven for 15 – 17 minutes or until an inserted toothpick comes out clean.⁠
