Classic Pelau Recipe

Ingredients:

2 tbsp brown sugar

2 tbsp oil

1 whole chicken, seasoned and cut into small parts

1 cup uncooked long grain rice

1 cup frozen piegon peas

1 med carrot, chopped

1.5 cups pumpkin, chopped

Fresh herbs: thyme, celery, shadon beni, finely chopped (1/4 cup)

3/4 cup coconut milk

Salt and black pepper to taste

1 scotch bonnet pepper

2 tbsp French Maid Garlic 

 

Directions:

Heat oil and cook sugar in a large pot over medium heat until it begins to caramelize.

Stir in the chicken, and cook until well browned.

To the pot add rice, pigeon peas, carrots, pumpkin, salt and black pepper, whole scotch bonnetpepper, coconut milk and 1-1.5 cups of water and bring it to a simmer; cover and cook until rice is cooked, about 25-30 minutes. To finish add fresh herbs and French Maid Garlic. Best served hot.
