Three Bean Salad with Garlic Infused Oil

Bean Salad⁠

1 can chickpeas⁠
1 can black beans⁠
1 can kidney beans⁠
½ cup corn kernels⁠
1 large cucumber, chopped⁠
4 large tomatoes, chopped⁠
8 chadon beni leaves, finely chopped⁠
1.5 tsp Dijon mustard⁠
1 tsp honey⁠
3 cloves of garlic, finely grated⁠
¼ tsp black pepper⁠
½ tsp red pepper flakes⁠
1 tsp salt⁠
¼ cup Constance estate garlic infused coconut oil⁠
1 tbsp red wine vinegar⁠

Directions⁠

Firstly, drain and wash all beans, then add to a large bowl along with corn, tomatoes and cucumbers.⁠

In a small bowl or measuring cup add oil, vinegar, garlic, salt, black pepper, mustard, honey, red pepper flakes and chadon beni and whisk together until fully incorporated.⁠

Pourl vinaigrette over beans and mix well to combine. Place in the refrigerator and allow it to sit for at least 1 hour before serving.
