Bean Salad
1 can chickpeas
1 can black beans
1 can kidney beans
½ cup corn kernels
1 large cucumber, chopped
4 large tomatoes, chopped
8 chadon beni leaves, finely chopped
1.5 tsp Dijon mustard
1 tsp honey
3 cloves of garlic, finely grated
¼ tsp black pepper
½ tsp red pepper flakes
1 tsp salt
¼ cup Constance estate garlic infused coconut oil
1 tbsp red wine vinegar
Directions
Firstly, drain and wash all beans, then add to a large bowl along with corn, tomatoes and cucumbers.
In a small bowl or measuring cup add oil, vinegar, garlic, salt, black pepper, mustard, honey, red pepper flakes and chadon beni and whisk together until fully incorporated.
Pourl vinaigrette over beans and mix well to combine. Place in the refrigerator and allow it to sit for at least 1 hour before serving.
