The West Indies is full of delectable, richly flavoured dishes and this one is no different! Here’s our take on the famous Rice & Peas Cook Up made specially with our Simply Natural Coconut Oil! ?
1 cup rice
1 can red kidney beans
1 small onion, finely diced
1 tbsp grated ginger
4 cloves garlic, minced
2 pimento peppers, minced
1 scotch bonnet pepper
5 thyme sprigs
1 small bunch chive, finely chopped
1 ½ cups coconut milk
½ cup water
1 tsp salt
½ tsp all purpose seasoning
½ tsp black pepper
½ tsp allspice
1 tbsp simply natural coconut oil
In a large pot over medium heat add simply natural oil and sauté onion, garlic, ginger and pimento for 3 mins before adding red beans and sautéing for a further 3 mins.
Then add washed rice and toast for 2 mins before adding allspice along with half of the chive and thyme. Stir pot to combine.
Add coconut milk, water, salt, black pepper and all purpose seasoning and mix to combine. Place scotch bonnet into the pot and allow the pot to come to a boil. Once boiling cover pot and turn down heat to the lowest and let cook for 20 mins undisturbed. After 20 mins turn off heat and allow the rice and peas to sit covered for another 5 mins before adding the remaining chive and thyme, fluffing the rice and serving.
