Homemade Peanut Butter Spread
(sugar free, salt free)
2 1/3 c lightly roasted peanuts
1/2-1 tsp Simply Natural coconut oil
Ground cinnamon, to taste, optional
Ground nutmeg, to taste, optional
Method:
Add peanuts to your food processor. Process until very smooth,
stopping every 30 seconds to allow your processor’s motor to rest.
Be sure to scrape down the sides of the bowl, as necessary.
The mixture will be chunky at first. Then, thicken into a ball before
finally, becoming creamy and smooth.
This process takes about 10 mins in total, including intermittent rest time for your food processor in between.
Process for long as needed to get the mixture really smooth. Store it in an airtight container in the refrigerator for up to 1 month.
** Optional: You may add a pinch or two of sugar and/or salt to taste.
