Prep: 20 mins Bake: 11–13 mins
Makes: 30–36 cookies

INGREDIENTS

  • ¾ cup (170 g) Marigold Margarine, softened
  •  ½ cup (115 g) cream cheese, softened
  •  1 cup (200 g) granulated sugar
  •  1 cup (220 g) brown sugar, packed
  •  1 large egg
  •  1 egg yolk
  •  2 tsp vanilla extract
  • 1–2 tbsp red food colouring (or gel colouring as needed)
  • 2¾ cups (385 g) all-purpose flour
  • ¼ cup (25 g) unsweetened cocoa powder
  • 1 tsp baking soda
  • 2 cups (340 g) white chocolate chips, divided
  • Gummy skulls and bones, for decorating

METHOD

  1. Preheat the oven. Preheat oven to 350°F (175°C). Line two baking trays with parchment paper and set aside.
  2. Cream the margarine and sugars. In a large mixing bowl, beat Marigold Margarine, softened cream cheese, granulated sugar and brown sugar until smooth, creamy and well combined, approximately 2–3 minutes.
  3. Add the wet ingredients. Beat in the egg, followed by the egg yolk, vanilla extract and red food colouring. Mix until evenly combined and the dough has a vibrant red colour.
  4. Combine the dry ingredients. In a separate bowl, whisk together the flour, cocoa powder, baking soda and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms. Avoid overmixing.
  5. Gently fold in 1½ cups of white chocolate chips.
  6. Shape the cookies. Scoop tablespoon-sized portions of dough and roll into balls. Place onto the prepared baking trays, leaving approximately 2 inches between each cookie. If the dough feels too soft or sticky, refrigerate for 20–30 minutes before shaping.
  7. Bake for 11–13 minutes, or until the edges are set but the centres are still slightly soft. The cookies will continue to firm up as they cool.
  8. Allow the cookies to cool on the baking trays for approximately 5 minutes, then transfer to a wire rack. Once the cookies are warm rather than hot, gently press the gummy skulls and bones onto the tops.
  9. Cool and serve. Allow the cookies to cool completely before serving.
