Three Bean Salad with Garlic Infused Oil

Bean Saladā 
ā 
1 can chickpeasā 
1 can black beansā 
1 can kidney beansā 
Ā½ cup corn kernelsā 
1 large cucumber, choppedā 
4 large tomatoes, choppedā 
8 chadon beni leaves, finely choppedā 
1.5 tsp Dijon mustardā 
1 tsp honeyā 
3 cloves of garlic, finely gratedā 
Ā¼ tsp black pepperā 
Ā½ tsp red pepper flakesā 
1 tsp saltā 
Ā¼ cup Constance estate garlic infused coconut oilā 
1 tbsp red wine vinegarā 
ā 
Directionsā 
ā 
Firstly, drain and wash all beans, then add to a large bowl along with corn, tomatoes and cucumbers.ā 
ā 
In a small bowl or measuring cup add oil, vinegar, garlic, salt, black pepper, mustard, honey, red pepper flakes and chadon beni and whisk together until fully incorporated.ā 
ā 
Pourl vinaigrette over beans and mix well to combine. Place in the refrigerator and allow it to sit for at least 1 hour before serving.
