MINI CORN DOGS
1 cup flour
1 cup yellow corn meal
2 tbsp granulated sugar
2 tsp baking powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt
1/2 black pepper
1 large egg
3 tbsp Simply Natural or Nariel coconut oil
1.25 cups buttermilk or buttermilk substitute
8 hotdogs cut into half
16 popsicle sticks
3 cups of Simply Natural or Nariel coconut oil for frying
– For the batter add all dry and wet ingredients into a bowl and mix well to combine.
– Pour batter into a glass and set aside. Pat the hotdogs dry and cut in half. Insert a popsicle stick into the cut side about half way into the hotdog, for each one.
– In a pot on medium to high temperature allow oil to heat. When the oil is hot begin to dip each hotdog into the batter and carefully place in hot oil and fry until golden brown. Remove from corn dogs from the pot and place on paper towels to absorb excess oil. Fry in batches of 4.
– Best served hot with ketchup and mustard.
NB* If the batter is not sticking to the hotdogs give them a light dusting of cornstarch.
